Day 1: Food for a Week

The older my children get, the more I realize and understand just how important time is. For the past three years I have been running around like a chicken without a head trying to juggle work/family/ and personal life, with little luck. Most nights I crawl into the bed tired and exhausted well after midnight. Many nights - and when I say many I mean like 3-5 times a week- we find ourselves at some restaurant eating someone else's cooking. The chef at 99 knows my name, y'all.. so, not good. All that eating out took a huge toll on my family's budget and diet, and quite honestly I could prepare much tastier and healthier meals myself.

So today while the kids were napping, I made enough food for the next week. I made baked chicken, mashed potatoes, fried fish, pasta salad, pan fried pork chops, stuffing (or dressing as some may cal lit) green beans, corn, broccoli, sauteed zucchini, corn bread, pudding, cupcakes, Iced Tea, and lemonade. I put everything into the freezer, except for tonight's dinner of course, and for the first time in a very long time I felt accomplished. .. we shall see how long this feeling (and the food) lasts.

That is an excellent thing to do! To help with meal preps I'll usually cook 2-3 meals on Sunday and throughout the week interchange items. That way it doesn't seem like we're eating the same thing every day, I don't have to cook everyday, and we both have lunch!
