Our Vegan Easter Dinner

Preparing dinner for the family today was kinda tough... There's Zoe who loves noodles, Miles who loves sauces,Kyle who loves Meat, and then there's me... Vegetarian/Vegan Trish...

I've been looking since last week for a dinner recipe that would be suitable for all of us, but it wasn't until I went to a local Asian supermarket that the dinner I had envisioned became a reality...

For Appetizers we had Vegan Wontons. I diced up some "vegetarian chicken" (SEITAN) added shitake mushrooms, onions, garlic, and parsley and stuffed them into these funky little wonton wrappers I found at the Asian market. I threw them into a pot of vegetable broth and watched "the masic" as Miles calls it...

For the main course we had stir fry vegetables and "vegetarian beef" (also seitan)over rice noodles.

We finished up with Soy Ice cream and strawberries...

I was able to satisfy the Zoe's need for noodles, Miles' need for sauce, and Kyle's need for meat... MISSION ACCOMPLISHED!
